What the food looks like when it reaches your table

The B40 kitchen does not plate like a standard beer joint: a beef salad arrives as separate bands of ingredients — rare beef, bean sprouts, Vietnamese coriander, fried shallots, crushed roasted peanuts — with a whole puffed sesame rice cracker almost the width of the plate laid over the top and a dish of sliced chilli sauce alongside. You break the cracker yourself and scoop up what is underneath, so the dish is both something to look at and something the whole table shares. Staff in black aprons embroidered with an orange B40 bring it out. That presentation is why the food here tends to get photographed before it gets eaten.

Getting to B40

B40 is at 12-14 Tran Hung Dao, at the Ben Thanh end of the avenue — a major road running straight from central District 1 through to District 5, familiar to every driver, so the street number is all you need. About three minutes by car from Ben Thanh Market and a ten-minute walk from the Nguyen Hue walking street. The wide frontage makes dropping off easy, unlike the alley venues around Bui Vien.
